If you have never been on a cruise before, you are in for the time of your life. There are cruises going anywhere and everywhere that there is water.

I am told it is a shopper’s paradise. I don’t know as I could care less about shopping, but don’t tell my wife and daughters. There are “discounts” and items you wouldn’t find at home. Something for everyone.
I go for the adventure. Snorkeling, sightseeing and visiting places that I have only dreamed about. It gives real images to my thoughts of how I dare to escape the rat race.
You can plan for many months for such a vacation or you can go at the last minute. Real savings are found in the last minute deals. You should never, ever pay rack prices on a cruise. Those prices are only for the uninitiated.
Once on board, you will have access to 24 hour free food including international cuisine. There are three scheduled meals a day and many opportunities to eat in between. I would recommend everyone go to the scheduled dinner. It usually has a different theme for each night of the cruise. The wait staff is superb, they perform a show (based on the theme) for you and you get to meet people from other parts of the world. Hint: Dress up at night and don’t go too casual. That is part of the experience.
When you aren’t eating, there is lounging by the pool soaking up the sun and the suds. There are movies, shows and activities for all ages. You can visit the spa, exercise, read a book at the library or do anything else you want. It is your free time after all!
Every cruise ship has ports of call where they dock for a period of time. Once at port, you can go ashore and do whatever you like or you can go on any number of planned excursions the ship provides. You can even stay aboard and do nothing, but I suggest you get out and see the world if you have never seen that portion of God’s acre before.
From crystal blue water and their reefs of fish, to historic places to mountains and icebergs, I have seen it all … You should too.

From weekend workshops to full-service culinary academies, men and women are drawn to cooking lessons.  Now you can incorporate your love for cooking with your dreams of high seas adventure because more and more cruise ships are offering cooking-related events onboard.
Originally attributed to small cruise ships that needed an incentive to gain bookings, cooking cruises have grown over the years and are now found aboard large vessels.  One of the most recent announcements is from Holland America.  Working in conjunction with Food & Wine magazine, Holland America's Culinary Arts Center will offer demonstrations and seminars from world-renowned chefs, wine experts, cookbook authors and more.
A fleet-wide enhancement, the Culinary Arts Center will be retrofit onto all 13 existing ships and will also be incorporated into the upcoming 14th ship due to launch in summer 2008.  Each Culinary Arts Center will include theater-style seating, state-of-the-art show kitchen, plasma screens that allow every participant to see, a display counter for easy viewing and space for guests to participate in preparing some of the dishes. Upgrades to all Holland America’s ships will be complete by summer 2006 allowing each ship to include Culinary Arts Center activities during each cruise.
One small cruise company offers tours featuring chefs from the world-famous Le Cordon Bleu.  As you cruise the Baltic Ocean or the Mediterranean Sea, you can enjoy studying under talented instructors.  Other small ships sail to Greece, Turkey and other worldwide destinations offering cooking classes based on each region visited.
Over 60 top chefs are slated to appear during the next 12 months on Holland America’s ships including Nick Stellino, chef and host of Nick Stellino's Family Kitchen V; Jacques Torres, chocolatier, pastry chef and cookbook author; Aaron Sanchez, chef and owner of Paladar, New York City; Michelle Bernstein, owner and chef of MB restaurant in Cancun; Neal Gallagher, chef of Oceana (and voted Best New Chef of 2003); Charles Dale, founder of Aspen's Renaissance, Range and Rustique restaurants, and the list goes on.
Food preparation, wine tasting, cooking classes, seminars, book signings, question-and-answer sessions and market tours in port are just a few of the activities passengers on various ships can look forward to.
When booking a cooking cruise, look for themes such as grilling, desserts, healthy entrees, Italian, Mexican, etc.  In addition, also ask about group discounts.  Holland's Culinary Group Program offers special fares for groups of 25 or more, a cabin for a guest chef, two one-hour demonstration sessions, a complimentary wine tasting or cocktail party and a color group photo.
Most cooking cruises allow you to eat what has been prepared, so you can literally taste the fruits of your labor.  However, samples may not be enough for an entire meal.  If the cooking tour you book is aboard a smaller ship rather than a large vessel with onboard restaurants, you might be wise to ask if a meal will be served prior to booking your reservation.
Whether you opt for an intimate-sized ship with only a few hundred passengers and a defined itinerary or a large vessel capable of sailing the world, cooking cruises are fun, entertaining and exciting for every member of the family.  Ask your travel agent for the details on cooking cruises available in the destinations you want to sail.

In some ports of call, where the ship must anchor, access via wheelchair may not be possible.
Ships generally stock a limited number of wheelchairs but please be aware they must be pre-reserved at the time of your booking.
Due to S.O.L.A.S. (Safety of Live At Sea) Regulations, physically challenged passengers must have partial mobility, and a traveling companion who can assist them, should an emergency arise.
You'll find that the newer, larger cruise ships have been built with the goal of full-accessibility. A new ship will have wider corridors, more spacious cabins, more, and larger, elevators and ramps where needed. In addition, the designated "accessible" cabins on newer ships are outfitted with many of the following features that will make your cruise vacation a more comfortable experience:
* Stateroom and cabin doorways wide enough for wheelchairs (at least 30")
* Stateroom dimensions and floor space for maneuverability and bathroom dimensions adequate for maneuvering
* No "lips" or sills into bathrooms

In some ports, ships must anchor offshore due to size of the port or because of extreme weather (if the weather is too extreme they won’t stop at that port at all). They "tender" guests to shore with small boats that may not be accessible to guests in wheelchairs. You'll want to check with the shore excursions department to determine which shore excursions are most suitable for you. In some destinations, particularly those outside of the United States, you will not always find accessible transportation and facilities.
Some of the Princess cruise line ships have hoists by the pool so a physically challenged passengers can enjoy the pool.  Some of Holland American ships have the ability to tender wheelchairs into ports where they do not dock.  Ask your travel agent to inquire with those lines to find the ship that is suitable for you.
There is no reason that anyone who is physically challenged should avoid a cruise vacation.   Just remember when you are looking into cruise travel that you have your travel agent find the cruise ship that caters to your needs.

Everyone has their favorite Caribbean Island but if you don’t know, cruising the Cayman Islands is a highlight of a Caribbean Cruise.  The three islands hold many attractions some that are unique to these islands.  The world’s only commercial Green Sea Turtle farm is located here and is an interesting tour.  Other attractions include the National Museum, Queen Elizabeth II Botanical Park and Garden, Bird Sanctuaries, Nature trails and Wetlands Preserves.  And, of course, for those who can’t live without it, shopping is abundant without the hassle of street vendors (prohibited by law).
One of the most famous natural attractions in Grand Cayman Island is Stingray City. This is an area in the ocean not far from the northern tip of Grand Cayman where tourists can get up close to hundreds of friendly stingrays. Stingray City will be one of the organized tours from the cruise ships visiting Grand Cayman as a port of call. There will also be tours available from local operators in Georgetown where the cruise ships dock. The cruise organized tours will almost always be the more expensive option but you will save a lot of shore time.
Scuba divers can book specialized dives at Stingray City through one of the many diver operators in Grand Cayman. The scuba diving at Stingray City is at a deeper section away from the tourist crowds who are usually brought to a very shallow area. Certified scuba divers and even snorkelers are recommended to take the dive trip option with the dive shops to experience Stingray City with fewer crowds. For non-divers, the sandbars here are shallow enough to stand and feed the stingrays. 
It is believed that many years ago, sailors visiting the area while cleaning their catch threw fish remains overboard and soon noticed the stingrays coming into the cove for the free food. These particular stingrays became conditioned over the years to humans and the food handouts unlike stingrays elsewhere in the Caribbean.
The stingrays here are friendly enough that people could touch them and local guides have been known to even hold them. The guides will warn everyone that even though these stingrays appear to be quite friendly, they should still be regarded as wild animals so it is never recommended to touch them by their razor sharp tails or abuse them in any manner. It is possible to feed them with the squid parts provided on site. The mouths of the stingrays are located underneath their bodies and people are instructed to hold the food in their palms flat facing up. With their keen sense of smell, the stingrays will hover towards and over the food to collect their snacks.
The guides, a devilish lot, usually target in on the squeamish of all the passengers. As soon as those passengers are in the water they throw food around the hapless folks to attract the stingrays to that area.  So seem brave and you won’t get picked on.
Although Stingray City can be crowded at times due to its popularity, it does offer a very unique experience to see these wonderful sea creatures up close. Stingrays are usually very shy animals and will swim away from scuba divers and snorkelers but not at Stingray City in Grand Cayman.
This is a tour that all members of your family can enjoy, you, your children even the grandparents.  It is easy to get on and off the boat and the water is only about chest deep, depending on your height.  Life jackets are available for all.  I highly recommend this outing but book early as word has gotten around and this is a very popular excursion.

There are also additions, like the very popular Explorations Café’. As cruise passengers are well aware of, it is a coffee bar/Internet café’, game room, and library. The New York Times powers all the Explorations Café.
The Noordam’s maiden season for the year 2006 is sailing wintertime cruises from New York to the Caribbean.
2. Norwegian Cruise Lines’ America’s Pride of Hawaii
This new cruise ship for 2006 by NCL America is the sister vessel of the Norwegian Jewel.
For the cruise line, Pride of Hawaii marks the first new build from the hull up.
Its launching is to be on June. This passenger ship is expected to accommodate 2,224 passengers. It will be the next step in Norwegian Cruise Lines’ America’s “Freestyle Cruising” concept.
The Pride of Hawaii’s interior décor will be, of course, Hawaiian.
This cruise ship will run by departing weekly on Mondays and travel the islands calling Honolulu home.
NEWS UPDATES
May 19, 2006 – NCL Corporation (“NCL”) today announced that it has extended its relationship with the Republic of Kiribati enabling it to continue to offer Fanning Island on its long Hawaii cruises through to 2011 and to commit one of its purpose-built new Freestyle Cruising ships to this increasingly popular itinerary. Norwegian Sun, will replace Norwegian Wind sailing 10- and 11-day itineraries from Honolulu with a stop at Fanning Island beginning in September 2007. This newer, larger ship, launched in 2001, will take over and grow NCL’s 10- and 11-day Hawaiian trade when Norwegian Wind is transferred to the Star Cruises fleet in late April 2007. The addition of Norwegian Sun to Hawaii, following the addition of Pride of Hawaii in June, completes the Norwegian Cruise Line brand and NCL America’ brand Hawaiian fleets and will bring the total NCL Hawaiian fleet to over 8,500 lower berths.
3. The Royal Caribbean’s Freedom of the Seas
This new 2006 cruise ship will be launched on May.
This 158,000-ton cruise ship has a capacity of 3,600 passengers. It will actually be 10,000 tons larger than the Cunard’s Queen Mary 2. With this, it is expected to become the largest cruise ship for 2006.
The Freedom of the Seas both will have new and enhanced amenities for the passengers’ pleasure. There is already an ongoing hype among the cruise travelers about its surf park feature.
We will also expect whirlpools cantilevered over the side of this remarkable cruise ship. Another new thing, the H2O Zone may also become a palpable hit for the passengers.

4. The Crown Princess of New Princess Cruises
For the satisfaction of 2006 cruise travelers, the Crown Princess is expected to accommodate 3,110 cruise travel passengers.
New Princess Cruises cruise line redesigned the Skywalker’s Disco, which has gained popularity from cruise passengers in their other cruise ships. They also have the Lotus Spa and good news for everybody. It has been expanded in the Crown Princess!
New pastries and snacks will adorn the International Café. Crown Princess will then have the first ever wine and seafood bar of the cruise line.
Other expansions were made to other popular features like the Wheelhouse Bar, Sabatini’s Trattoria, and the Sterling Steakhouse.
Crown Princess will sail roundtrip from the Red Hook terminal in New York. It will make stops at the Eastern Caribbean and the Bermuda and Turks and Caicos.
Maiden voyage begins on June 14, 2006.
5. MSC Musica
MSC will launch their new cruise ship for the year 2006 quite late in the year, on July 01. Musica is an Italian ship that will bring MSC into the ranks of big cruise ships. It is expected to accommodate 2,550 passengers.
One of its outstanding features will be that a full 80% of its 1,275 staterooms will be outside rooms. In addition, 65% of these staterooms will have verandas.
It will also feature a large spa area. The Musica’s cruise travel passengers will also have several dining options. They will also enjoy a three deck high waterfall and many different entertainment venues.
Musica will sail the eastern Mediterranean from Venice.
6. The Costa Cruises’ Costa Concordia
This new 2006 cruise ship is owned by Carnival Corporation, which is based in Italy.
This will be the largest cruise ship to join the Costa Cruises’ fleet. It will also be launched quite late this year, July 14. It is expected to accommodate 3,000 passengers.
For the inspiration of its travel passengers, the Costa Concordia will have European architecture theme for its interior décor. All the room’s names will be European inspired or oriented. They will have the Grand Bar Berlin, Cafeteria Helsinki, and the Milan and Rome dining rooms.
If you are seeking for interesting activity while in the cruise travel, Costa Concordia will have a Formula 1 driving simulator for the particular enthusiasts.

There are many cruise ships now that have Freestyle Dining (Norwegian Cruises) or Choice Dining (Prince Cruise line) available.  Or on Disney Cruise Lines they have what is called “Rotational Dining”.  They have you and your tablemates rotate through the three restaurants each evening.
TIP: There is usually open seating for breakfast and lunch in the main dining room. Be adventurous with the menu because if you don’t like something you can send it back for a replacement.  And if they have two things on the menu that you like ask for both of them.  My husband, John, always orders the Filet Mignon and the Lobster Tail when they are served on the same night.  Many times he tells the waiter to bring what the waiter recommends for that evening. 
This means you don’t have to choose first or second seating. (First seating is 6:00 to 6:30 and Second seating is usually 8:00-8:30). There can be more than one restaurant where you just walk in when you are ready to dine.  Every ship will ask for your dining preference when you book your cruise.  You can indicate first, second or flexible dining, whichever will make you more comfortable. The newer ships have a 24 hour dining spot which is always casual so if you don’t want to do the formal nights you don’t have to, although I find dressing up to be quite fun. 
You will have many options for each meal.  You may have any meal delivered to your room, taken in the buffet restaurant or in the dining room.  There is usually outdoor dining around the pool with hot dogs and hamburgers, pizza, salads, even Tacos. 
There are also alternative dining rooms available on some ships that require an additional fee but the service and food are generally 4 to 5 star and worth it if you want to splurge.
In my experience families with young children and people who go to bed early usually dine in first seating.  But if you don’t want to be on a schedule or want to meet new people every night, go for the alternative dining option. Of course you can always ask for a table for two, but be aware that there are only a few of them.
If you make a special request one night, John always asks for blue cheese, your waiter will bring it every night.  They pride themselves on remembering your tastes. (This only happens when you choose traditional dining). On one cruise we asked for Melba toast, and you bet, every night we had Melba toast.  There is one thing I always make clear to the waiter.  I am not a big eater but I like to taste everything.  I tell this to them the first night so they don’t think I am unhappy with the food.  It is their job to keep you happy and they take it very seriously. 
If you don’t want to eat in the main dining room almost all ships have a Lido café where it is casual but you order from a menu and are served by a waiter.  It’s one of the many choices if you don’t want to participate in a formal night or if you just want to eat by yourselves. On Carnivals single cruises they encourage this style of dining so the singles can meet more people. There are exceptions to this but not many.  On some of the newer ships the Lido is open 24 hours a day.
On most of the cruise lines they offer the food of the region that you are visiting.  While on Hawaiian cruises expect to be served Hawaiian food.  When on an Alaskan cruise you will be given the choices of salmon and Alaskan king crab legs. It makes more fun to dine on the local cuisine.
All of the cruise lines offer healthy alternative menus or what they call spa menus.  So if you want low-fat, low-salt, low cholesterol, vegetarian or any other type of diet, they are available.  It is best however to inform your travel agent of any special needs so they can notify the cruise line ahead of time.  If you have special dietary needs make sure the cruise lines knows before hand.  For example, Royal Caribbean cruises cater to food allergy, Kosher, Indian, Vegetarian and Gluten Free Diets.
